Ruffoni Historia 18.5" Copper Fish Kettle 99226
Length 18.5 in
Width 6.5 in
Height 4.75 in
Capacity 9 qt
Lid Included
A truly unique piece, the Ruffoni Historia fish kettle is long and tall-sided for gently poaching a whole large fish, and the included rack lifts the cooked fish out without breaking it. Poach lean fish like cod, sole, snapper or halibut, or richer salmon and trout, in a court bouillon, a Mediterranean broth of garlic, fennel, olive oil and bay, or a coconut, lime and ginger poach.
Set it across two burners over medium-low heat, simmer gently, then let the fish rest in its liquid for moist, perfectly cooked results, and bring the kettle to the table for the wow factor. Hand-hammered from solid copper and lined with pure tin over an open flame, it is crowned with Ruffoni's signature acorn and leaf finial.
